Born and classically trained as a chef in London, England, Adam made an early statement for himself by becoming the youngest chef to attain a Michelin Red M while head of a small restaurant. He was also well known in the Gastro Pub scene and set up and successfully ran pubs in Chelsea and Primrose Hill.
Enter Ros – fresh out of private school and from studying science at University – travelled and moved to London where she happened upon a job in one of Adam’s kitchens. With no classical training she still managed to introduce some Australian flavours to the British and found her niche with gorgeous desserts.
Cutting a long and sordid story short - in 1998 they moved to Australia, married and set up in the Hunter Valley. With a 2 year stint at the Kurrajong Restaurant at the Cessnock Hotel - seeing it through renovations and putting the first Hunter Valley Pub in the Good Food Guide, they moved to Lovedale.
Mojo’s on Wilderness opened in September 2000.
We are a 40 seat, small, intimate restaurant. We have a small menu that reflects our style of food. We aim to look after each of our customers with the highest level of service we can and serve them food of the highest quality we can make.
Adam does weekly visits to the Sydney Vegetable Market and brings home boxes of fresh ingredients for us to play with. While Adam is influenced by English chefs Gordon Ramsay, Marco Pierre White and the Roux brothers, Ros is influenced by Serge Dansereau of Bathers Pavilion and the flavours of Maggie Beer.
Since taking over the 20 acre property with tourist accommodation, an olive grove and the restaurant, we are now in the process of widening our range and soon to open a gourmet deli with benefits (you’ll have to wait and see…)
